Ingredients: (Serves 4)
300g Frozen corn, defrosted
⅔ Cup self-raising flour
½ Bunch of parsley, stems chopped and leaves picked
Pinch of salt
1 Tablespoon olive oil
1 Avocado, halved and thinly sliced
¼ Red onion, thinly sliced
80g Feta, crumbled
1 Lemon, cut into wedges
1. Place 200g corn, flour, eggs, parsley stems and salt in a small food processor. Blitz until smooth. Transfer to a medium bowl and stir through remaining 100g corn.
2. Heat oil in a large frying pan over medium heat. Add ¼-cup portions of mixture. Cook for 2-3 minutes each side or until golden and cooked through. Remove fritters from the pan and keep warm. Continue cooking the remaining mixture.
3. Divide corn fritters between serving plates. Top with avocado, red onion, feta and parsley leaves. Serve alongside lemon wedges.
