Ingredients: (Serves 4)
½ Cup brown sugar
1 Teaspoon vanilla extract
1 Cinnamon quill
2 Star Anise
4 Green apples, peeled, quartered and cored
1 Sheet puff pastry
½ Cup crème fraiche, to serve
1. Preheat oven to 200°C.
2. Combine brown sugar, butter, vanilla, cinnamon and star anise in a medium oven-proof frying pan over medium heat. Cook, stirring occasionally, for 3-4 minutes or until melted and combined. Add apples, cored side down, evenly around the pan. Simmer for 5-6 minutes or until apples are golden and slightly tender, turning halfway. Remove pan from the heat and discard cinnamon quill and star anise.
3. Cut a round of pastry the same size as the frying pan. Cut a cross in the centre. Cover the top of the apples with the pastry round and tuck in neatly. Bake for 15-20 minutes or until the crust is golden, puffed and crispy.
4. Remove pan from the oven and allow to cool for 1 minute. Carefully place a serving plate or board over the top of the pan and flip the pan over so that the pastry is now on the bottom of the tart. Remove the pan gently as the juices will be very hot.
5. Cut tarte tatin into wedges and serve with crème fraiche.
